Serpentine sections curve so a head table can wrap toward the room, or a buffet can flow in an S instead of a straight line. When you seat one, guests sit along the outer edge facing in, much like a head table. If the serpentine is only a buffet or a cake table, it needs no seating at all, just a clear spot on your floor plan.
